Description

Delicious and easy-to-make glazed cherry pie bars with a buttery crust and sweet cherry filling, topped with a smooth glaze.


Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • 2 cups (400 g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • ½1 tsp almond extract (optional, but highly recommended)
  • 3 cups (375 g) all-purpose flour
  • 1 tsp salt
  • 2 cans (21 oz each / ~600 g) cherry pie filling (or 4 cups homemade cherry filling)
  • 1 cup (120 g) powdered sugar
  • 23 tbsp milk or cream
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease and line a 15×10-inch baking pan (or use a 9×13-inch pan for thicker bars).
  2. In a large mixing bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each.
  4. Mix in vanilla and almond extract.
  5. Gradually add flour and salt, mixing just until combined.
  6. Spread about 3 cups of the batter evenly in the bottom of the pan.
  7. Spoon cherry pie filling evenly over the batter.
  8. Drop spoonfuls of the remaining batter over the filling to create a marbled look.
  9. Bake for 35–40 minutes, or until golden brown and a toothpick inserted in the crust comes out clean.
  10. Cool completely in the pan on a wire rack.
  11. In a small bowl, whisk powdered sugar, milk, and vanilla until smooth and drizzle generously over the cooled bars.
  12. Slice into squares or bars and serve.
  13. Store at room temperature (covered) for 2 days, or refrigerate for up to 5 days.

Notes

  • For a thicker bar, use a 9×13-inch pan.
  • Feel free to adjust the almond extract to your taste.
  • These bars can be made ahead of time and stored for later enjoyment.
