Description

A tender vanilla loaf rolled with a rich cinnamon-sugar filling, baked until golden, then drizzled with a silky glaze and topped with toasted pecans. Pure perfection for breakfast, dessert, or gifting.


Ingredients

  • 1 ½ cups (190 g) all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup (120 ml) whole milk
  • ⅓ cup (70 g) brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter
  • ¾ cup powdered sugar
  • 12 tbsp milk
  • ½ tsp vanilla
  • ⅓ cup chopped pecans (lightly toasted if possible)

Instructions

  1. Preheat oven to 350°F / 180°C and line a loaf pan (8×4 or 9×5) with parchment paper.
  2. In a bowl, whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until light and fluffy (2–3 min). Add eggs one at a time, mixing well. Add vanilla. Add flour mixture and milk alternating (start and end with flour). Mix until smooth.
  3. Mix brown sugar, cinnamon, and melted butter into a paste for the filling.
  4. Spread half of the batter evenly in the pan. Spoon half the cinnamon filling on top and spread gently. Add the rest of the batter and spread the remaining cinnamon filling over it. Using a knife, roll, or spatula, gently swirl the filling into the batter (don’t over-mix).
  5. Bake for 45–55 minutes, or until a toothpick comes out clean. Cool the loaf fully before glazing.
  6. Whisk powdered sugar, vanilla, and milk until smooth and drizzly. Pour over the cooled loaf in thick ribbons and sprinkle chopped pecans on top while the glaze is still wet.
