Ingredients

  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • ½ cup heavy cream (optional, for extra richness)
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ½ cup feta cheese, crumbled (optional)
  • 1 small onion, finely chopped (or 2 green onions)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill (or 1 tsp dried dill)
  • 1 tbsp olive oil or butter
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 180°C (350°F). Grease a 9-inch round pie dish or springform pan.
  2. Heat olive oil/butter in a pan. Sauté onion until soft and translucent. Add chopped spinach and cook just until wilted. Remove from heat.
  3. In a large bowl, whisk together eggs, milk, cream, garlic powder, paprika, salt, and pepper. Stir in parsley, dill, shredded cheese, and feta. Add spinach-onion mixture and mix well.
  4. Pour mixture into prepared dish. Bake for 35–40 minutes, until the top is golden and center is set. Let cool 10 minutes before slicing.

Notes

  • For a lighter version, omit the heavy cream.
  • Feel free to add other vegetables like bell peppers or mushrooms.
  • This quiche can be served warm or at room temperature.
