A delicious and easy-to-make crustless quiche packed with fresh spinach and herbs, perfect for any meal.

- 6 large eggs
- 1 cup milk (whole or 2%)
- ½ cup heavy cream (optional, for extra richness)
- 1 cup fresh spinach, chopped
- 1 cup shredded cheese (cheddar, mozzarella, or Swiss)
- ½ cup feta cheese, crumbled (optional)
- 1 small onion, finely chopped (or 2 green onions)
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill (or 1 tsp dried dill)
- 1 tbsp olive oil or butter
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and black pepper to taste
Instructions
- Preheat oven to 180°C (350°F). Grease a 9-inch round pie dish or springform pan.
- Heat olive oil/butter in a pan. Sauté onion until soft and translucent. Add chopped spinach and cook just until wilted. Remove from heat.
- In a large bowl, whisk together eggs, milk, cream, garlic powder, paprika, salt, and pepper. Stir in parsley, dill, shredded cheese, and feta. Add spinach-onion mixture and mix well.
- Pour mixture into prepared dish. Bake for 35–40 minutes, until the top is golden and center is set. Let cool 10 minutes before slicing.
Notes
- For a lighter version, omit the heavy cream.
- Feel free to add other vegetables like bell peppers or mushrooms.
- This quiche can be served warm or at room temperature.
