Description

Gooey Peanut Butter & Jelly Cheesecake Bombs are irresistible treats that combine creamy cheesecake filling with a delicious dough shell, coated in graham cracker crumbs.


Ingredients

  • 8 oz (225 g) cream cheese, softened
  • ¼ cup peanut butter (smooth or crunchy)
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 can refrigerated biscuit dough (or crescent roll dough)
  • ½ cup strawberry or raspberry jam (or your favorite jelly)
  • 1 cup crushed graham crackers (or digestive biscuits)
  • 2 tbsp sugar
  • 2 tbsp melted butter
  • Extra jam for drizzling (optional)
  • Melted peanut butter or white chocolate drizzle (optional)
  • Crumble topping (brown sugar + butter + crushed cookies) (optional)

Instructions

  1. In a medium bowl, beat cream cheese, peanut butter, powdered sugar, and vanilla until smooth and fluffy.
  2. Chill for 15–20 minutes to firm up slightly.
  3. Flatten each biscuit dough piece into a small circle.
  4. Spoon a tablespoon of cheesecake filling into the center.
  5. Add a small teaspoon of jam on top.
  6. Carefully fold the dough around the filling and pinch edges to seal.
  7. In a shallow dish, mix crushed graham crackers with sugar.
  8. Brush each dough ball with melted butter, then roll in the graham mixture until fully coated.
  9. Preheat oven to 375°F (190°C).
  10. Place balls seam-side down on a parchment-lined baking sheet.
  11. Bake for 12–15 minutes, or until golden brown.
  12. Drizzle with melted peanut butter, white chocolate, or extra jam.
  13. Sprinkle with crumble topping for extra crunch.

Notes

  • For a different flavor, try using chocolate or grape jelly.
  • Make sure to seal the dough well to prevent the filling from leaking during baking.
