  • 1 cup (240 ml) sour cream
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • ½ cup (120 g) pumpkin purée
  • ½ tsp pumpkin pie spice
  • Orange and purple gel food coloring
  • ¼ cup (60 g) blueberry or blackberry jam (optional for purple swirl)
  • Sweetened whipped cream or frosting rosettes for topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham crumbs, brown sugar, and melted butter. Press into the bottom of a 9-inch (23 cm) springform pan. Bake for 8 minutes, then let cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating after each addition. Mix in sour cream, vanilla, and flour until fully combined.
  4. Divide the batter into three bowls: Bowl 1: Leave plain (white base). Bowl 2: Add pumpkin purée + pumpkin spice + orange food coloring. Bowl 3: Stir in purple food coloring (and jam if using).
  5. Pour the white batter over the crust. Alternate spoonfuls of orange and purple batters on top. Use a skewer or knife to gently swirl the colors for a marbled effect (don’t overmix).
  6. Bake at 325°F (160°C) for 55–65 minutes, until edges are set but the center jiggles slightly. Turn off the oven, crack the door, and let it cool inside for 1 hour.
  7. Chill in the fridge for at least 4 hours (or overnight).
  8. Pipe whipped cream rosettes around the edges. Add candy eyeballs, edible glitter, or chocolate spiders for a fun Halloween touch!
