Hawaiian Pineapple Coconut Truffles are a heavenly delight made with crushed pineapple, white chocolate, and shredded coconut, perfect for a tropical treat.

- ½ cup very finely chopped crushed pineapple (drained well)
- 4 oz (115 g) white chocolate chips or chopped white chocolate bars
- 1–1½ cups fine shredded/desiccated coconut (unsweetened or sweetened, depending on preference)
- Optional: 1–2 tsp pineapple juice (only if extra moisture is needed)
Instructions
- Drain the crushed pineapple very well, pressing out excess liquid with paper towels.
- Chop finely so there are no large chunks.
- In a microwave-safe bowl, melt the white chocolate in 20–30 second intervals, stirring until smooth.
- Alternatively, melt in a heatproof bowl over a saucepan of simmering water.
- Stir the drained pineapple into the melted chocolate until fully combined.
- Add ½–¾ cup shredded coconut and mix to form a thick, moldable mixture.
- Refrigerate the mixture for 20–30 minutes until firm enough to roll.
- Scoop 1 tablespoon portions and roll into balls.
- Roll each ball in the remaining shredded coconut to coat.
- Place truffles on a parchment-lined tray and refrigerate for at least 30 minutes before serving.
Notes
- Ensure the pineapple is well-drained to avoid a soggy mixture.
- Adjust the sweetness by choosing sweetened or unsweetened coconut.
- For a more intense pineapple flavor, add optional pineapple juice.
