Ingredients

  • ½ cup very finely chopped crushed pineapple (drained well)
  • 4 oz (115 g) white chocolate chips or chopped white chocolate bars
  • 1 cups fine shredded/desiccated coconut (unsweetened or sweetened, depending on preference)
  • Optional: 1–2 tsp pineapple juice (only if extra moisture is needed)

Instructions

  1. Drain the crushed pineapple very well, pressing out excess liquid with paper towels.
  2. Chop finely so there are no large chunks.
  3. In a microwave-safe bowl, melt the white chocolate in 20–30 second intervals, stirring until smooth.
  4. Alternatively, melt in a heatproof bowl over a saucepan of simmering water.
  5. Stir the drained pineapple into the melted chocolate until fully combined.
  6. Add ½–¾ cup shredded coconut and mix to form a thick, moldable mixture.
  7. Refrigerate the mixture for 20–30 minutes until firm enough to roll.
  8. Scoop 1 tablespoon portions and roll into balls.
  9. Roll each ball in the remaining shredded coconut to coat.
  10. Place truffles on a parchment-lined tray and refrigerate for at least 30 minutes before serving.
