Description

A hearty and nutritious beef vegetable soup filled with flavor and healthy ingredients.


Ingredients

  • 1 lb (450g) lean ground beef
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1/2 head cabbage, chopped
  • 1 can (14 oz / 411g) diced tomatoes
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large soup pot, brown the beef and onion over medium heat; drain fat.
  2. Add carrots and celery; cook for 5 minutes until slightly softened.
  3. Stir in cabbage, diced tomatoes (undrained), broth, thyme, garlic powder, salt, and pepper.
  4. Bring to a boil, then reduce heat to low.
  5. Simmer for 25-30 minutes until all vegetables are tender.
  6. Taste and adjust seasoning before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • This soup can be stored in the refrigerator for up to 3 days.
  • It can also be frozen for up to 3 months.
