- 1 lb lean ground beef
- 2 cups mixed vegetables (frozen or fresh)
- 1 medium onion, chopped
- 3 medium russet potatoes, thinly sliced
- 1 can (10 oz) cream of mushroom soup
- 2 cups shredded sharp cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, sauté the chopped onion until translucent. Add the ground beef and cook until browned.
- Stir in the mixed vegetables and cream of mushroom soup until well combined.
- Grease a baking dish and layer half of the sliced potatoes at the bottom. Top with half of the meat mixture, then add another layer of potatoes followed by the remaining meat mixture.
- Sprinkle shredded cheddar cheese generously on top.
- Cover with aluminum foil and bake for 45 minutes. Remove foil during the last 15 minutes to allow cheese to become crispy.
Notes
- This dish can be customized with your favorite vegetables.
- For a spicier version, add diced jalapeños or your favorite hot sauce to the meat mixture.
