Description

Holiday Jello Ribbon Cheesecake Squares are a festive treat featuring a graham cracker crust, creamy cheesecake filling, a cheerful green gelatin ribbon, and a bright red jello top with festive sprinkles.

  • 6 tbsp (85 g) unsalted butter, melted
  • 2 tbsp sugar
  • 225 g cream cheese, softened
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240 ml) heavy cream, whipped to stiff peaks
  • ½ cup (120 ml) milk (for thinning, if needed)
  • 1 box (3 oz / 85 g) lime Jello
  • 1 cup boiling water
  • ½ cup cold water
  • 1 box (3 oz / 85 g) cherry Jello (or strawberry)
  • 1 cup boiling water
  • ½ cup cold water
  • Red, white, and green sprinkles
  • Optional mini holiday candies

Instructions

  1. Prepare the graham cracker crust by mixing graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of a square baking dish.
  2. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the whipped heavy cream until well combined.
  3. Spread the cheesecake mixture over the graham cracker crust evenly.
  4. For the green gelatin layer, dissolve the lime Jello in 1 cup of boiling water, then add ½ cup of cold water. Allow it to cool slightly before pouring it over the cheesecake layer. Refrigerate until set.
  5. For the red gelatin layer, dissolve the cherry Jello in 1 cup of boiling water, then add ½ cup of cold water. Once the green layer is set, pour the red gelatin over it and refrigerate until fully set.
  6. Once set, cut into squares and decorate with sprinkles and optional mini holiday candies before serving.

Notes

  • Make sure to let each layer set completely before adding the next layer.
  • For a firmer cheesecake, you can add more whipped cream or reduce the milk.
