  • ½ cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil (for searing)
  • ⅓ cup honey
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tsp cornstarch + 2 tbsp water (slurry, optional for thickening)
  • 12 oz (340 g) fettuccine pasta
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ½ tsp nutmeg (optional)
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, egg, Parmesan, garlic, onion powder, Italian seasoning, salt, and pepper. Shape into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear meatballs until golden brown on all sides and cooked through (about 10–12 minutes).
  3. In a saucepan, combine honey, soy sauce, garlic, and vinegar. Bring to a simmer. If you prefer a thicker sauce, whisk in cornstarch slurry and cook until thickened. Toss meatballs in the glaze until fully coated.
  4. Cook fettuccine according to package directions. Drain and set aside.
  5. In a skillet, melt butter and sauté garlic until fragrant. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese, stirring until melted and smooth. Season with nutmeg, salt, and pepper. Toss pasta in the sauce until coated.
  6. Plate Alfredo fettuccine and top with glazed honey garlic chicken meatballs. Drizzle extra glaze on top and garnish with parsley.
