Description
A delightful dessert featuring honey-roasted pears topped with fresh berries, blue cheese, and walnuts, perfect for impressing guests or enjoying a sweet treat.

- 2 large ripe but firm pears (Bosc or William recommended)
- 1 tbsp butter
- 2–3 tbsp honey
- 1 to 1.5 cups fresh berries (blueberries, raspberries, cranberries)
- 40–60 g blue cheese (gorgonzola, roquefort, or Danish blue, crumbled)
- 2–3 tbsp walnuts (or pecans), roughly chopped
- A few sprigs of fresh thyme (optional, recommended)
- Pinch of salt + black pepper to taste
Instructions
- Preheat oven to 190°C / 375°F.
- Cut pears in half lengthwise and remove the core and seeds to form a small hollow.
- Place cut-side up on a baking dish and brush the cut surface with butter.
- Drizzle generously with honey and add a pinch of salt.
- Roast for 18–22 minutes, until soft and lightly caramelized.
- Remove from oven and fill the hollow with fresh berries.
- Sprinkle with walnuts and add small crumbles of blue cheese.
- Add a bit of fresh thyme and return to the warm oven for 2 minutes to soften the cheese.
- Drizzle a final thread of honey or balsamic glaze and add fresh cracked black pepper before serving warm.
Notes
- For a sweeter dessert version, add a tiny splash of vanilla or cinnamon.
- Adjust the amount of blue cheese according to taste, as it has a strong flavor.
