  • 1 tbsp orange juice
  • 1 tbsp brown sugar (optional, for extra sweetness)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut pears in half lengthwise and use a spoon or melon baller to scoop out the cores and seeds. Arrange the pears cut-side up in a baking dish.
  3. Brush them with melted butter, drizzle with honey, and sprinkle with cinnamon, vanilla, and a pinch of salt.
  4. Roast for 25–30 minutes, or until the pears are golden, tender, and caramelized on the edges. Tip: Spoon the pan juices over the pears halfway through baking for extra flavor.
  5. In a small bowl, mix mascarpone, honey, vanilla, and orange zest until smooth and creamy. Chill until ready to serve.
  6. In a small saucepan, combine cranberries, honey (or maple syrup), orange juice, and brown sugar. Simmer over medium heat for about 6–8 minutes, until the cranberries soften and release their juices, forming a syrupy sauce. Let it cool slightly — it will thicken as it cools.
  7. Place the warm roasted pears on plates. Spoon a generous dollop of mascarpone cream into each pear’s hollow. Drizzle with the cranberry syrup and the pan’s honey juices. Garnish with extra cranberries or a sprig of rosemary for a festive touch.
