- 4 ripe but firm pears (such as Bosc or Anjou)
- 2 tbsp unsalted butter, melted
- 3 tbsp honey
- ½ tsp ground cinnamon
- ½ tsp vanilla extract
- Pinch of sea salt
- 1 cup (250 g) mascarpone cheese
- 1 tbsp honey
- ½ tsp vanilla extract
- Zest of ½ orange (optional, for brightness)
- ½ cup (60 g) fresh or frozen cranberries
- ¼ cup (60 ml) honey or maple syrup
- 1 tbsp orange juice
- 1 tbsp brown sugar (optional, for extra sweetness)
Instructions
- Preheat oven to 375°F (190°C).
- Cut pears in half lengthwise and use a spoon or melon baller to scoop out the cores and seeds. Arrange the pears cut-side up in a baking dish.
- Brush them with melted butter, drizzle with honey, and sprinkle with cinnamon, vanilla, and a pinch of salt.
- Roast for 25–30 minutes, or until the pears are golden, tender, and caramelized on the edges. Tip: Spoon the pan juices over the pears halfway through baking for extra flavor.
- In a small bowl, mix mascarpone, honey, vanilla, and orange zest until smooth and creamy. Chill until ready to serve.
- In a small saucepan, combine cranberries, honey (or maple syrup), orange juice, and brown sugar. Simmer over medium heat for about 6–8 minutes, until the cranberries soften and release their juices, forming a syrupy sauce. Let it cool slightly — it will thicken as it cools.
- Place the warm roasted pears on plates. Spoon a generous dollop of mascarpone cream into each pear’s hollow. Drizzle with the cranberry syrup and the pan’s honey juices. Garnish with extra cranberries or a sprig of rosemary for a festive touch.
