Description
A delicious and creamy artichoke dip, perfect for parties or as a snack!
Ingredients

- 1 can (14 oz.) artichoke hearts in water
- 1/4 cup sliced green onions
- 1/4 cup sliced Peperoncini peppers (more or less to taste)
- 8 oz. cream cheese
- 1 cup sour cream
- 1 cup grated Parmesan
- 2 tsp. Spike Seasoning
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper
- Optional: Joseph’s Flax, Oat Bran, and Whole Wheat Pita Bread for serving
Instructions
- Take cream cheese out of the fridge and let it soften on the counter.
- Preheat oven to 375F/190C. Spray baking dish with non-stick spray if desired.
- Drain artichokes in a colander placed in the sink. Pat dry with paper towels if they still seem wet.
- Chop artichokes, slice green onions, and chop Peperoncini peppers, then place them in a food processor, using the steel blade.
- Process until all the ingredients are coarsely chopped pieces about the same size, keeping them a bit chunky for texture.
- In a plastic or glass bowl, combine softened cream cheese, sour cream, Parmesan cheese, Spike Seasoning, garlic powder, and black pepper. Stir to combine well.
- Stir artichoke heart mixture into the cream cheese mixture and gently combine.
- Place dip mixture into a glass or crockery baking dish that holds at least one quart.
- Bake for 30 minutes, or until the dip is bubbling hot and starting to slightly brown on top. Cook a bit longer if you prefer a browned Parmesan crust.
- Serve hot with toasted triangles of Joseph’s Low-Carb Pita Bread, gluten-free pita bread, red bell pepper strips, sliced jicama, or celery. Or use toasted bread or tortilla chips if you don’t care about the carbs.
Notes
- Adjust the amount of Peperoncini peppers to your taste.
- Spike Seasoning can be replaced with other seasonings if preferred.
