- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 6 tbsp cold unsalted butter, cubed
- ¾–1 cup cold buttermilk
- 1 lb boneless, skinless chicken thighs or breasts (cut into biscuit-sized pieces)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
- Oil for frying
- ½ cup honey
- 1–2 tbsp hot sauce (adjust to heat preference)
- 1 tsp red pepper flakes (optional for extra heat)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Stir in buttermilk until dough comes together.
- Turn dough onto a floured surface, fold it over a few times, then pat to about ¾-inch thickness.
- Cut biscuits with a round cutter and place on a baking sheet.
- Bake for 12–15 minutes, until golden brown.
- In a bowl, soak chicken pieces in buttermilk for at least 30 minutes (up to overnight).
- In another bowl, mix flour, paprika, garlic powder, salt, and pepper.
- Dredge chicken pieces in flour mixture, pressing to coat.
- Heat oil in a skillet over medium-high heat. Fry chicken for 4–5 minutes per side or until golden brown and cooked through (165°F / 74°C). Drain on paper towels.
- In a small saucepan, warm honey, hot sauce, and red pepper flakes over low heat until combined.
- Split warm biscuits in half.
- Place a piece of fried chicken inside, then drizzle generously with hot honey.
- Serve immediately.

- For extra flaky biscuits, avoid overworking the dough.
- Adjust the amount of hot sauce in the hot honey to suit your heat preference.
