Description

Ingredients

  • 1 pound gnocchi (store-bought or homemade)
  • 3 cups fresh spinach
  • 1 cup ricotta cheese (whole milk)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (plus extra for serving)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to package instructions in salted boiling water until they float (about 2-3 minutes). Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and minced garlic. Sauté for 1 minute until fragrant, then add spinach and cook until wilted (about 2 minutes).
  3. Pour in heavy cream, stir in ricotta, and half of the grated Parmesan. Simmer gently while stirring until combined.
  4. Add cooked gnocchi to the sauce, tossing gently to coat each piece.
  5. Season with salt and pepper to taste, adding more Parmesan if desired.
  6. Serve immediately, garnished with fresh herbs if you like.
