This delicious gnocchi dish is creamy and packed with nutrients from the fresh spinach and ricotta cheese.

- 1 pound gnocchi (store-bought or homemade)
- 3 cups fresh spinach
- 1 cup ricotta cheese (whole milk)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese (plus extra for serving)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the gnocchi according to package instructions in salted boiling water until they float (about 2-3 minutes). Drain and set aside.
- In a large skillet over medium heat, add olive oil and minced garlic. Sauté for 1 minute until fragrant, then add spinach and cook until wilted (about 2 minutes).
- Pour in heavy cream, stir in ricotta, and half of the grated Parmesan. Simmer gently while stirring until combined.
- Add cooked gnocchi to the sauce, tossing gently to coat each piece.
- Season with salt and pepper to taste, adding more Parmesan if desired.
- Serve immediately, garnished with fresh herbs if you like.
