- 2 cups all-purpose flour
- 1 tbsp cocoa powder
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp red food coloring
- 8 oz cream cheese
- 1/2 cup butter
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix vegetable oil and sugar until combined. Add eggs one at a time, mixing well after each.
- Stir in buttermilk and vanilla extract, then add red food coloring to desired shade.
- Gradually fold the dry ingredients into the wet mixture without overmixing.
- Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
- Allow cooling completely before frosting with cream cheese mixture.
Notes
- Make sure to let the cupcakes cool completely before frosting to prevent the cream cheese from melting.
