Description

Ingredients

  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • 8 oz cream cheese
  • 1/2 cup butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix vegetable oil and sugar until combined. Add eggs one at a time, mixing well after each.
  4. Stir in buttermilk and vanilla extract, then add red food coloring to desired shade.
  5. Gradually fold the dry ingredients into the wet mixture without overmixing.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow cooling completely before frosting with cream cheese mixture.
