- 3 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 12 oz store-bought cheese tortellini
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 2 cups fresh spinach
- 1 cup low-sodium chicken broth
- 2 tsp dried Italian herbs (oregano and basil)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the Tortellini: Boil salted water in a large pot. Add tortellini and cook per package instructions until tender. Drain and set aside.
- Sauté the Chicken: In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper, then sauté until golden brown on both sides (6-7 minutes per side). Remove from skillet and let rest.
- Add Garlic: In the same skillet, add minced garlic and sauté until fragrant (about 1 minute).
- Create the Sauce: Pour in heavy cream and chicken broth, stirring in dried Italian herbs and grated parmesan until melted together.
- Combine Everything: Slice the chicken and return it to the skillet with cooked tortellini and spinach. Stir gently until heated through.
- Serve It Up: Plate the dish, garnishing with additional parmesan if desired.
