- 1 cup (2 sticks / 227 g) Unsalted Butter, melted (for brownie base)
- 1 ½ cups (300 g) Light Brown Sugar, packed (for brownie base)
- ½ cup (100 g) Light Brown Sugar, packed (for brownie base)
- 4 Large Eggs, room temperature
- 2 tsp Pure Vanilla Extract
- 2 ½ cups (312 g) All-Purpose Flour
- ¾ cup (75 g) Unsweetened Cocoa Powder
- 1 tsp Baking Powder
- ½ tsp Fine Sea Salt
- 1 cup (170 g) Dark Chocolate Chips or Chunks (for brownie base)
- ½ cup (1 stick / 113 g) Unsalted Butter, softened (for swirl)
- 1 cup (120 g) Powdered Sugar, sifted (for swirl)
- ¼ cup (60 ml) Dark Molasses (for swirl)
- 2 tsp Ground Ginger (for swirl)
- 1 tsp Ground Cinnamon (for swirl)
- ½ tsp Ground Cloves (for swirl)
- ¼ tsp Ground Nutmeg (for swirl)
- 1 tbsp Gin Extract (for swirl)
- 1–2 tbsp Milk or Cream (for swirl)
- Flaky Sea Salt (optional garnish)
- Candied Ginger Pieces (optional garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix the melted butter and sugars until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the dark chocolate chips or chunks.
- In another bowl, beat together the softened butter, powdered sugar, dark molasses, ginger, cinnamon, cloves, nutmeg, gin extract, and milk or cream until smooth.
- Pour half of the brownie batter into the prepared pan. Swirl in half of the glaze mixture and then pour the remaining brownie batter on top. Repeat the swirls with the remaining glaze.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool, garnish with flaky sea salt and candied ginger before serving.
Notes
- For a richer flavor, consider using dark chocolate instead of semi-sweet.
- Ensure the eggs are at room temperature for better mixing.
- Store leftovers in an airtight container to maintain freshness.
