This hearty buffalo chicken recipe is easy to make in a slow cooker and perfect for meal prep!

- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 bell peppers (any color), chopped
- 1 can (14 oz) diced tomatoes
- 2 cups low-sodium chicken broth
- 1 cup buffalo sauce
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) kidney beans, rinsed and drained
- Fresh cilantro (optional for garnish)
Instructions
- Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
- Place chicken breasts in the bottom of the slow cooker. Layer on onions, bell peppers, minced garlic, diced tomatoes, black beans, kidney beans, cumin, chili powder, and buffalo sauce.
- Pour chicken broth over the mixture until just covered. Stir gently to combine.
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fork-tender.
- Shred the chicken in the slow cooker using two forks and stir everything together. Adjust seasoning if needed.
- Serve in bowls garnished with fresh cilantro, alongside crusty bread or tortilla chips.
Notes
- For a spicier dish, add more buffalo sauce or diced jalapeños.
- This meal can be served with tortilla chips or over rice for a complete meal.
