Description

This hearty buffalo chicken recipe is easy to make in a slow cooker and perfect for meal prep!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 bell peppers (any color), chopped
  • 1 can (14 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 1 cup buffalo sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • Fresh cilantro (optional for garnish)

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
  2. Place chicken breasts in the bottom of the slow cooker. Layer on onions, bell peppers, minced garlic, diced tomatoes, black beans, kidney beans, cumin, chili powder, and buffalo sauce.
  3. Pour chicken broth over the mixture until just covered. Stir gently to combine.
  4. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fork-tender.
  5. Shred the chicken in the slow cooker using two forks and stir everything together. Adjust seasoning if needed.
  6. Serve in bowls garnished with fresh cilantro, alongside crusty bread or tortilla chips.

Notes

  • For a spicier dish, add more buffalo sauce or diced jalapeños.
  • This meal can be served with tortilla chips or over rice for a complete meal.
