A flavorful and zesty dish featuring marinated chicken breasts infused with jalapeño, cilantro, and lime.
Ingredients

- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil
- Salt & black pepper, to taste
- 1 cup fresh cilantro, chopped
- 2 jalapeños, deseeded (keep seeds if you want extra heat)
- 3 cloves garlic
- Juice and zest of 2 limes
- 3 tbsp olive oil
- 1 tbsp honey (or agave)
- 1 tsp ground cumin
- ½ tsp smoked paprika
- 1 tsp salt
Instructions
- In a blender or food processor, combine cilantro, jalapeños, garlic, lime juice & zest, olive oil, honey, cumin, paprika, and salt.
- Blend until smooth and vibrant green.
- Place chicken in a bowl or zip-top bag.
- Pour marinade over and coat well.
- Cover and refrigerate at least 1 hour (up to overnight for best flavor).
- Heat 2 tbsp olive oil in a skillet or grill pan over medium-high heat.
- Cook chicken 5–6 minutes per side, until golden brown and fully cooked (internal temp 75°C / 165°F).
- Spoon extra marinade (reserved before adding raw chicken) or fresh cilantro-lime drizzle on top.
- Garnish with jalapeño slices and lime wedges.
Notes
- For extra heat, keep the seeds in the jalapeños.
- Marinating overnight enhances the flavor.
- Serve with rice or a fresh salad for a complete meal.
