Jalapeño Popper Stuffed Onion Rings are a delicious and crispy appetizer that combines the flavors of jalapeño poppers with the crunch of onion rings.

- 8 oz (225 g) cream cheese, softened
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2–3 jalapeños, finely chopped (seeds removed for less heat)
- 2 green onions, finely chopped
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper, to taste
- 2 large onions (cut into ½-inch rings, separated)
- 1 cup all-purpose flour
- 3 large eggs, beaten
- 2 cups panko breadcrumbs
- 1 tsp chili powder (optional, for extra kick)
- Oil, for deep frying
- Fresh parsley, chopped (for garnish)
- Dipping sauce (ranch, chipotle mayo, or queso)
Instructions
- Cut onions into thick slices and separate into rings. Pair up two rings (one slightly smaller inside the other) to create a hollow space for stuffing.
- In a bowl, mix cream cheese, cheddar, mozzarella, jalapeños, green onions, garlic powder, paprika, salt, and pepper. Spoon or pipe the filling between two onion rings (like a sandwich), pressing gently to seal. Freeze stuffed rings for 20–30 minutes to firm up.
- Dredge each stuffed ring in flour. Dip in beaten eggs. Coat in seasoned panko breadcrumbs. (Repeat egg + breadcrumb step for extra crunch.)
- Heat oil to 175°C (350°F). Fry rings in batches until golden brown and crispy (about 2–3 minutes per side). Drain on paper towels.
- Sprinkle with parsley. Serve hot with your favorite dipping sauce.
Notes
- For less heat, ensure to remove the seeds from the jalapeños.
- Freezing the stuffed rings helps them hold their shape while frying.
- Feel free to experiment with different cheeses for the filling.
