  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 tsp chili powder (optional, for extra kick)
  • Oil, for deep frying
  • Fresh parsley, chopped (for garnish)
  • Dipping sauce (ranch, chipotle mayo, or queso)

Instructions

  1. Cut onions into thick slices and separate into rings. Pair up two rings (one slightly smaller inside the other) to create a hollow space for stuffing.
  2. In a bowl, mix cream cheese, cheddar, mozzarella, jalapeños, green onions, garlic powder, paprika, salt, and pepper. Spoon or pipe the filling between two onion rings (like a sandwich), pressing gently to seal. Freeze stuffed rings for 20–30 minutes to firm up.
  3. Dredge each stuffed ring in flour. Dip in beaten eggs. Coat in seasoned panko breadcrumbs. (Repeat egg + breadcrumb step for extra crunch.)
