  • ½ cup (60 g) powdered sugar (for glaze)
  • 12 tsp fresh key lime juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, lime zest, and lime juice until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and graham cracker crumbs.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until incorporated.
  6. Scoop about 1½ tablespoons of dough per cookie and roll into balls.
