- ½ cup (113 g) unsalted butter, softened
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1–2 tbsp finely grated key lime zest
- 2 tbsp fresh key lime juice
- 1½ cups (180 g) all-purpose flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- ½ cup (50 g) graham cracker crumbs
- ½ cup (60 g) powdered sugar (for glaze)
- 1–2 tsp fresh key lime juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, vanilla extract, lime zest, and lime juice until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and graham cracker crumbs.
- Gradually add the dry mixture to the wet ingredients, mixing just until incorporated.
- Scoop about 1½ tablespoons of dough per cookie and roll into balls.
- Place on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball slightly.
- Bake for 10–12 minutes, or until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Whisk powdered sugar with enough lime juice to create a thick but pourable consistency for the glaze.
- Drizzle glaze over cooled cookies.
- Garnish with extra lime zest, crushed graham crackers, or candied lime peel if desired.
- Enjoy immediately or store in an airtight container at room temperature for up to 4 days.
