Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) light brown sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup (225 g) unsalted butter, cold and cubed
  • 1 cup (200 g) granulated sugar (for filling)
  • 2 tbsp all-purpose flour (for filling)
  • 4 large eggs
  • ½ cup (120 ml) fresh lemon juice
  • 1 tbsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  3. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  4. Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  5. Press half of the mixture firmly into the prepared pan to form the crust. Reserve the other half for the topping.
  6. In a separate bowl, whisk together sugar and flour for the filling.
  7. Add eggs, lemon juice, and lemon zest; whisk until smooth and fully combined.
  8. Pour the lemon filling over the crust in the pan.
  9. Sprinkle the reserved crumb mixture evenly on top.
  10. Bake for 30–35 minutes, or until topping is lightly golden and filling is set.
  11. Cool completely in the pan.
  12. Use parchment overhang to lift bars out of the pan.
  13. Slice into squares and garnish with thin lemon slices if desired.
  14. Store in the refrigerator for up to 5 days.
