- 2 cups (250 g) all-purpose flour
- ¾ cup (150 g) granulated sugar
- ¼ cup (50 g) light brown sugar
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup (225 g) unsalted butter, cold and cubed
- 1 cup (200 g) granulated sugar (for filling)
- 2 tbsp all-purpose flour (for filling)
- 4 large eggs
- ½ cup (120 ml) fresh lemon juice
- 1 tbsp lemon zest
Instructions
- Preheat oven to 350°F (175°C).
- Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
- Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
- Press half of the mixture firmly into the prepared pan to form the crust. Reserve the other half for the topping.
- In a separate bowl, whisk together sugar and flour for the filling.
- Add eggs, lemon juice, and lemon zest; whisk until smooth and fully combined.
- Pour the lemon filling over the crust in the pan.
- Sprinkle the reserved crumb mixture evenly on top.
- Bake for 30–35 minutes, or until topping is lightly golden and filling is set.
- Cool completely in the pan.
- Use parchment overhang to lift bars out of the pan.
- Slice into squares and garnish with thin lemon slices if desired.
- Store in the refrigerator for up to 5 days.
Notes
- For a sweeter taste, adjust the sugar in the lemon filling.
- These bars can be served chilled or at room temperature.
- Garnish with powdered sugar for an elegant touch.
