- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup fresh lemon juice (about 3 lemons)
- 2 tsp lemon zest
- ¾ cup granulated sugar
- 3 large eggs
- ½ cup unsalted butter, cubed
- Powdered sugar, for dusting (optional)
- Small candied lemon pieces or zest curls (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until dough forms.
- Scoop 1 tbsp of dough into each mini muffin cup. Press down gently to form a well in the center.
- Bake for 10–12 minutes, until edges are golden. Remove from oven and use the back of a spoon to re-press the wells. Let cool in the pan for 10 minutes, then transfer to a wire rack.
- In a saucepan, whisk together lemon juice, zest, sugar, and eggs over medium heat.
- Add butter cubes and whisk constantly until mixture thickens (about 7–10 minutes).
- Remove from heat and strain through a fine mesh sieve for a smooth curd. Let cool slightly.
- Spoon cooled lemon curd into each cookie cup.
- Chill in the fridge for 30 minutes to set.
- Dust with powdered sugar and garnish with candied lemon pieces or zest curls.
