Ingredients

  • 1 large egg

  • ¼ tsp salt
  • ½ cup fresh lemon juice (about 3 lemons)
  • 2 tsp lemon zest
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup unsalted butter, cubed
  • Powdered sugar, for dusting (optional)
  • Small candied lemon pieces or zest curls (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until dough forms.
  5. Scoop 1 tbsp of dough into each mini muffin cup. Press down gently to form a well in the center.
  6. Bake for 10–12 minutes, until edges are golden. Remove from oven and use the back of a spoon to re-press the wells. Let cool in the pan for 10 minutes, then transfer to a wire rack.
  7. In a saucepan, whisk together lemon juice, zest, sugar, and eggs over medium heat.
  8. Add butter cubes and whisk constantly until mixture thickens (about 7–10 minutes).
  9. Remove from heat and strain through a fine mesh sieve for a smooth curd. Let cool slightly.
  10. Spoon cooled lemon curd into each cookie cup.
  11. Chill in the fridge for 30 minutes to set.
  12. Dust with powdered sugar and garnish with candied lemon pieces or zest curls.
