Ingredients

  • 2 ½ cups graham cracker crumbs (or digestive biscuits, finely crushed)
  • ½ cup (115 g) unsalted butter, melted
  • ¼ cup (50 g) granulated sugar
  • 2 boxes (3.4 oz each) instant lemon pudding mix
  • 4 cups (960 ml) cold milk
  • 2 tbsp lemon juice (for extra tang)
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups (360 ml) heavy whipping cream (or Cool Whip, thawed)
  • 2 cups whipped cream (or Cool Whip)
  • Lemon slices & zest for garnish
  • Extra graham crumbs for sprinkling

Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar until combined. Spread onto a baking sheet and bake at 350°F (175°C) for 8–10 minutes, or until golden. Cool completely and set aside.
  2. In a large bowl, whisk pudding mixes with cold milk and lemon juice. Whisk until thickened (about 2 minutes). Chill until ready to assemble.
  3. Beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until fluffy. Fold in whipped cream until smooth and creamy.
  4. In a trifle dish, add a layer of crumbs. Spoon over cream cheese mixture. Add a layer of lemon pudding. Repeat layers until the dish is filled, finishing with cream or pudding on top. Decorate with whipped cream swirls, lemon slices, zest, and extra crumbs.

Notes

  • For a lighter version, you can use low-fat cream cheese and whipped topping.
