  • 1 cup (240 ml) whole milk
  • 1 ½ cups (170 g) shredded cheddar cheese (or a blend)
  • ½ tsp smoked paprika
  • Pinch of salt
  • Sour cream (about ½ cup)
  • Green onions, chopped
  • Jalapeño slices (optional)
  • Extra shredded cheese

Instructions

  1. Cook the Fries: Cook fries according to package directions (deep fry, bake, or air fry) until golden and crispy. Keep warm while preparing toppings.
  2. Make the Chili: In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add onion and garlic, cook until softened. Stir in tomato paste, crushed tomatoes, beans (if using), and spices. Simmer for 15–20 minutes, stirring occasionally, until thickened. Adjust seasoning.
  3. Make the Cheese Sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in milk until smooth and slightly thickened. Add shredded cheese, paprika, and salt. Stir until creamy.
  4. Assemble the Loaded Fries: Place fries on a serving platter. Top generously with chili. Drizzle hot cheese sauce over everything. Add a dollop of sour cream in the center. Sprinkle with green onions (and jalapeños if desired).
