- 2 cups prepared macaroni and cheese
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons butter
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- Optional toppings: sour cream, chopped green onions, salsa
Instructions
- Prepare the filling – Start with warm macaroni and cheese. If you are using leftovers from the refrigerator, gently heat them so they are creamy again. Cold mac and cheese can make the quesadilla harder to spread and cook evenly. I often add a pinch of garlic powder and black pepper to enhance the flavor before assembling the quesadillas.
- Assemble the quesadilla – Lay one tortilla flat on a clean surface. Sprinkle a small handful of shredded cheddar and mozzarella over half of the tortilla. This layer acts like glue that helps hold everything together. Spoon a generous portion of macaroni and cheese over the shredded cheese. Spread it evenly but keep it slightly away from the edges so it does not spill out during cooking. Top with another light sprinkle of cheese and fold the tortilla in half.
- Cook until golden – Heat a skillet over medium heat and melt a little butter in the pan. Place the folded quesadilla into the skillet and cook for about 3–4 minutes until the bottom becomes golden and crispy. Flip carefully and cook the other side until the tortilla is crisp and the cheese inside is fully melted.
- Slice and serve – Remove the quesadilla from the skillet and let it rest for a minute. Slice into wedges and serve warm. The inside will be creamy and cheesy while the outside has that irresistible crunch. Repeat with the remaining tortillas.
