Ingredients

Scale
  • 3 ripe mangos (diced)
  • 1 red pepper (chopped small)
  • 1/4 cup chopped cilantro
  • 1/4 cup finely diced onion
  • 12 jalapeños (chopped fine, optional)
  • 1 lime (juiced, or 1/4 cup lime juice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder (optional)
  • 1 cup corn
  • 1 avocado (diced)
  • 1 cup pineapple (diced)
  • 1/4 cup parsley (instead of cilantro)

Instructions

  1. Add the mangos, red pepper, cilantro, onion, and jalapeños (if using) to a medium bowl.
  2. In a small bowl, whisk the lime juice, salt, pepper, and chili powder (if using). Pour over the mango mixture.
  3. Toss until well combined.
  4. Let the salsa rest for 30 minutes so the flavors can blend.
