Description
A fresh and vibrant mango salsa perfect as a dip or a topping for various dishes.
Ingredients

- 3 ripe mangos (diced)
- 1 red pepper (chopped small)
- 1/4 cup chopped cilantro
- 1/4 cup finely diced onion
- 1–2 jalapeños (chopped fine, optional)
- 1 lime (juiced, or 1/4 cup lime juice)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder (optional)
- 1 cup corn
- 1 avocado (diced)
- 1 cup pineapple (diced)
- 1/4 cup parsley (instead of cilantro)
Instructions
- Add the mangos, red pepper, cilantro, onion, and jalapeños (if using) to a medium bowl.
- In a small bowl, whisk the lime juice, salt, pepper, and chili powder (if using). Pour over the mango mixture.
- Toss until well combined.
- Let the salsa rest for 30 minutes so the flavors can blend.
- Serve as a dip or spooned over fish, shrimp, chicken, or salads.
Notes
- This salsa can be made ahead of time and stored in the refrigerator for up to 2 days.
- For a spicier salsa, add more jalapeños.
