A quick and tasty Mason Jar Taco Salad recipe that layers delicious ingredients for a fresh meal.


Ingredients

Scale
  • 1 lb (450 g) ground beef or turkey
  • 1 packet taco seasoning (or homemade mix: chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper)
  • ½ cup water
  • 2 cups cooked rice (white or brown)
  • 1 cup diced tomatoes (or salsa)
  • 1 cup diced avocado (squeeze lime juice on top to prevent browning)
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded lettuce (or chopped romaine)
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish
  • Optional: Sour cream or Greek yogurt
  • Optional: Salsa or pico de gallo
  • Optional: Jalapeño slices
  • Optional: Lime wedges

Instructions

  1. In a skillet, cook ground beef/turkey until browned.
  2. Drain excess fat, add taco seasoning and water.
  3. Simmer until thickened. Let cool slightly before layering.
  4. Layer the jars starting with cooked rice at the bottom.
  5. Add diced tomatoes (or salsa) next.
  6. Then add avocado cubes (tossed with lime juice).
  7. Add black beans and corn.
  8. Add taco meat.
  9. Top with lettuce.
  10. Finish with shredded cheese and cilantro.
  11. Seal jars with lids and refrigerate until ready.
  12. When serving, shake the jar to mix or pour into a bowl.

Notes

  • Layer heavier/wet ingredients at the bottom and lighter/delicate ingredients on top to keep it fresh.
  • Use lime juice on avocado to prevent browning.
