Description

A delicious twist on the classic grilled cheese sandwich, infused with Mediterranean flavors.


Ingredients

  • 4 slices rustic bread (sourdough, ciabatta, or multigrain)
  • 4 tbsp butter (softened) or olive oil for brushing
  • 1 cup mozzarella cheese (shredded or sliced for extra melt)
  • ½ cup feta cheese, crumbled
  • ½ cup spinach (fresh or lightly sautéed)
  • ⅓ cup sun-dried tomatoes (drained & chopped)
  • 1 tbsp fresh basil (or ½ tsp dried)
  • Pinch of crushed red pepper flakes (optional for heat)

Instructions

  1. Spread butter (or brush olive oil) evenly on one side of each bread slice. Place buttered side down to assemble the sandwiches.
  2. Layer mozzarella and feta onto the unbuttered side of two bread slices. Top with spinach, sun-dried tomatoes, and basil. Sprinkle a pinch of crushed red pepper flakes if desired. Place the remaining bread slices on top, buttered side facing out.
  3. Heat a skillet or griddle over medium heat. Place sandwiches in skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted. If cheese isn’t melting enough, cover skillet with a lid for 1–2 minutes.
  4. Slice in half for that perfect cheese pull. Serve with a side of marinara, tzatziki, or balsamic glaze drizzle for dipping.
