Description
A delicious twist on the classic grilled cheese sandwich, infused with Mediterranean flavors.
Ingredients

- 4 slices rustic bread (sourdough, ciabatta, or multigrain)
- 4 tbsp butter (softened) or olive oil for brushing
- 1 cup mozzarella cheese (shredded or sliced for extra melt)
- ½ cup feta cheese, crumbled
- ½ cup spinach (fresh or lightly sautéed)
- ⅓ cup sun-dried tomatoes (drained & chopped)
- 1 tbsp fresh basil (or ½ tsp dried)
- Pinch of crushed red pepper flakes (optional for heat)
Instructions
- Spread butter (or brush olive oil) evenly on one side of each bread slice. Place buttered side down to assemble the sandwiches.
- Layer mozzarella and feta onto the unbuttered side of two bread slices. Top with spinach, sun-dried tomatoes, and basil. Sprinkle a pinch of crushed red pepper flakes if desired. Place the remaining bread slices on top, buttered side facing out.
- Heat a skillet or griddle over medium heat. Place sandwiches in skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted. If cheese isn’t melting enough, cover skillet with a lid for 1–2 minutes.
- Slice in half for that perfect cheese pull. Serve with a side of marinara, tzatziki, or balsamic glaze drizzle for dipping.

- Optional add-ins include caramelized onions, roasted red peppers, and Kalamata olives (sliced).
