- Salt & black pepper, to taste
- 1 tbsp olive oil (for cooking)
- 2 cups tortilla chips (sturdy ones for stacking)
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 1 cup guacamole
- 1 cup pico de gallo (tomatoes, onion, cilantro, lime juice, jalapeños)
- ½ cup sour cream (for drizzling)
- 1 large sesame seed burger bun (or giant brioche bun for drama)
- Shredded lettuce (for the base layer)
Instructions
- Season ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Shape into thick patties (at least 4 large ones for a towering effect).
- Heat oil in a skillet or grill pan and cook patties until golden brown and cooked to your liking. Melt cheddar and Monterey Jack cheese on top of each patty while hot.
- Warm tortilla chips slightly in the oven for crispness. Make fresh guacamole and pico de gallo (or use pre-made for ease).
- Place the bottom burger bun on a large serving board. Add a layer of shredded lettuce and some pico de gallo.
- Stack the first burger patty, then add tortilla chips, guacamole, and sour cream drizzle. Repeat the stacking process with the remaining patties, chips, and toppings until all layers are built.
- Crown with the top bun, pressing lightly to hold everything together.
