Description

A vibrant and whimsical Mille-Crêpes Cake featuring neon rainbow swirl layers and a light whipped cream filling, perfect for celebrations.

Ingredients

Scale
  • 2 cups whole milk
  • 1 cup all-purpose flour
  • 4 large eggs
  • 4 tablespoons unsalted butter, melted (plus extra for the pan)
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Gel food coloring (red, orange, yellow, green, blue, purple, pink)
  • 2 ½ cups heavy cream, chilled
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Whipped cream swirls for decoration
  • Rainbow sprinkles for decoration
  • Powdered sugar, for dusting

Instructions

  1. Prepare the Crêpe Batter: In a blender, combine milk, flour, eggs, melted butter, sugar, vanilla, and salt. Blend until smooth. Divide the batter into 6–7 bowls and tint each one with a different neon gel food coloring. Chill the batters for at least 30 minutes for easier cooking.
  2. Cook the Crêpes: Heat a nonstick pan over medium heat and lightly butter it. Pour in about ¼ cup of batter, swirling to coat the pan thinly. Cook 1–2 minutes per side until lightly golden. Repeat with all colored batters, stacking them between sheets of parchment to prevent sticking.
  3. Make the Whipped Cream Filling: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Keep chilled until assembling.
  4. Assemble the Cake: On a serving plate, place one crêpe and spread a thin layer of whipped cream. Repeat with alternating neon-colored crêpes and cream, pressing gently to keep the stack even. Continue until all crêpes are used, finishing with a plain or brightly colored one on top.
  5. Decorate: Pipe whipped cream swirls on top. Add rainbow sprinkles. Dust lightly with powdered sugar for a finished look.

Notes

  • Ensure the crêpe batter is well-blended for a smooth texture.
  • Chilling the batter helps in cooking the crêpes evenly.
  • Use a nonstick pan to prevent the crêpes from sticking.
  • Feel free to customize the colors based on your preference.
