- 3–4 tbsp heavy cream (or milk)
- ½ tsp vanilla extract (for glaze)
- Fresh whole strawberries (for topping)
- Powdered sugar (for dusting)
Instructions
- Prep the oven: Preheat oven to 350°F (175°C). Grease and line an 8-inch or 9-inch round cake pan (deep pan recommended).
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- Cream butter and sugar: In a large mixing bowl, beat butter and sugar together until light and fluffy, 2–3 minutes.
- Add eggs and extracts: Beat in eggs one at a time, scraping down the sides. Mix in vanilla and almond extract.
- Add buttermilk and flour mixture: Alternate adding dry ingredients and buttermilk in 3 parts, beginning and ending with flour. Mix until just combined—do not overmix.
- Fold in strawberries: Gently fold in chopped strawberries.
- Bake: Pour batter into prepared pan and smooth top. Bake for 45–55 minutes, or until golden and a toothpick comes out clean. Let cake cool in pan 10 minutes, then transfer to a wire rack.
- Prepare glaze: Whisk together powdered sugar, cream, and vanilla until smooth and pourable.
- Assemble: Pour glaze generously over cooled cake. Top with whole strawberries and a dusting of powdered sugar.
