Description

A delicious and moist strawberry buttermilk cake topped with a sweet glaze and fresh strawberries, perfect for any occasion.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 4 large eggs (room temperature)
  • 1 ½ tsp vanilla extract
  • 1 tsp almond extract (optional, enhances flavor)
  • 1 cup buttermilk (room temperature)
  • 1 ½ cups fresh strawberries, hulled and chopped
  • 1 ½ cups powdered sugar (for glaze)
  • 34 tbsp heavy cream (or milk)
  • ½ tsp vanilla extract (for glaze)
  • Fresh whole strawberries (for topping)
  • Powdered sugar (for dusting)

Instructions

  1. Prep the oven: Preheat oven to 350°F (175°C). Grease and line an 8-inch or 9-inch round cake pan (deep pan recommended).
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar: In a large mixing bowl, beat butter and sugar together until light and fluffy, 2–3 minutes.
  4. Add eggs and extracts: Beat in eggs one at a time, scraping down the sides. Mix in vanilla and almond extract.
  5. Add buttermilk and flour mixture: Alternate adding dry ingredients and buttermilk in 3 parts, beginning and ending with flour. Mix until just combined—do not overmix.
  6. Fold in strawberries: Gently fold in chopped strawberries.
  7. Bake: Pour batter into prepared pan and smooth top. Bake for 45–55 minutes, or until golden and a toothpick comes out clean. Let cake cool in pan 10 minutes, then transfer to a wire rack.
  8. Prepare glaze: Whisk together powdered sugar, cream, and vanilla until smooth and pourable.
  9. Assemble: Pour glaze generously over cooled cake. Top with whole strawberries and a dusting of powdered sugar.

Notes

  • Ensure all ingredients are at room temperature for best results.
  • For a richer flavor, consider using almond extract.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
