Mini Jam & Cream Brioche Swirls are delightful, fluffy pastries filled with a creamy topping and a fruity jam center, perfect for any sweet occasion.
Ingredients

- 300 g (2 ½ cups) all-purpose flour
- 40 g (3 tbsp) sugar
- 7 g (2 tsp) instant yeast
- ½ tsp salt
- 120 ml (½ cup) warm milk
- 2 large eggs (room temp)
- 80 g (⅓ cup) unsalted butter, softened
- 250 g mascarpone (or cream cheese)
- 200 ml heavy cream (cold)
- 80 g powdered sugar
- 1 tsp vanilla extract
- 150 g fruit jam (raspberry, strawberry, or cherry)
- Pearl sugar or crushed caramelized nuts (for garnish)
Instructions
- In a bowl, mix flour, sugar, salt, and yeast.
- Add warm milk and eggs, knead until dough forms.
- Gradually knead in softened butter until smooth and elastic (10–12 minutes).
- Cover and let rise 1–1.5 hours, until doubled.
- Divide into 12 portions, shape into round buns, place on a baking tray.
- Let rise another 30–40 minutes.
- Brush with egg wash and sprinkle pearl sugar.
- Bake at 180°C (350°F) for 15–18 minutes until golden. Let cool.
- Whip heavy cream until soft peaks form.
- Beat mascarpone, powdered sugar, and vanilla until smooth.
- Fold whipped cream into mascarpone to make a fluffy filling.
- Transfer to a piping bag with a star or round nozzle.
- Once brioches are cooled, pipe a swirl of cream on top of each.
- Spoon a small amount of jam in the center of the cream.
- Sprinkle with pearl sugar or crushed caramelized nuts for crunch.

- Ensure the butter is softened for easy incorporation into the dough.
- Use cold heavy cream for better whipping results.
- Feel free to experiment with different fruit jams for variety.
