Description

Mini Pizza Pot Pies are a fun and delicious twist on classic pizza, perfect for a quick meal or snack.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 2 ¼ tsp instant yeast (1 packet)
  • ¾ cup warm water
  • 2 tbsp olive oil
  • 1 cup pizza sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • ½ cup mini pepperoni slices (or regular, cut small)
  • ½ cup cooked Italian sausage, crumbled (optional)
  • ½ cup bell peppers, mushrooms, or onions, diced (optional)
  • Extra shredded mozzarella for topping
  • Pepperoni slices for topping
  • Fresh basil or parsley for garnish

Instructions

  1. In a bowl, mix flour, sugar, salt, and yeast.
  2. Stir in warm water and olive oil until dough forms.
  3. Knead for 5–7 minutes until smooth and elastic.
  4. Cover and let rise in a warm spot for about 1 hour, until doubled in size.
  5. In a bowl, mix pizza sauce, mozzarella, pepperoni, sausage, and veggies.
  6. Preheat oven to 375°F (190°C). Grease small ramekins or use foil tart molds.
  7. Roll out dough and cut into circles slightly larger than your molds.
  8. Place a dough circle inside each mold, pressing it up the sides.
  9. Spoon in the pizza filling.
  10. Sprinkle extra mozzarella on top and arrange pepperoni slices.
  11. Bake for 20–25 minutes, until crust is golden and cheese is bubbly.
  12. Cool slightly before removing from molds.
  13. Top with fresh basil or parsley before serving.

Notes

  • Feel free to customize the filling with your favorite pizza toppings.
  • These pot pies can be made ahead of time and reheated.
