Mini Pizza Pot Pies are a fun and delicious twist on classic pizza, perfect for a quick meal or snack.
Ingredients

- 2 cups all-purpose flour
- 1 tsp sugar
- 1 tsp salt
- 2 ¼ tsp instant yeast (1 packet)
- ¾ cup warm water
- 2 tbsp olive oil
- 1 cup pizza sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- ½ cup mini pepperoni slices (or regular, cut small)
- ½ cup cooked Italian sausage, crumbled (optional)
- ½ cup bell peppers, mushrooms, or onions, diced (optional)
- Extra shredded mozzarella for topping
- Pepperoni slices for topping
- Fresh basil or parsley for garnish
Instructions
- In a bowl, mix flour, sugar, salt, and yeast.
- Stir in warm water and olive oil until dough forms.
- Knead for 5–7 minutes until smooth and elastic.
- Cover and let rise in a warm spot for about 1 hour, until doubled in size.
- In a bowl, mix pizza sauce, mozzarella, pepperoni, sausage, and veggies.
- Preheat oven to 375°F (190°C). Grease small ramekins or use foil tart molds.
- Roll out dough and cut into circles slightly larger than your molds.
- Place a dough circle inside each mold, pressing it up the sides.
- Spoon in the pizza filling.
- Sprinkle extra mozzarella on top and arrange pepperoni slices.
- Bake for 20–25 minutes, until crust is golden and cheese is bubbly.
- Cool slightly before removing from molds.
- Top with fresh basil or parsley before serving.
Notes
- Feel free to customize the filling with your favorite pizza toppings.
- These pot pies can be made ahead of time and reheated.
- Store leftovers in an airtight container in the refrigerator.
