Description
Buttery tart shells filled with creamy spinach, garlic, and melted cheese — perfect for Christmas parties, brunch, or elegant appetizers.

- 1 ½ cups (190 g) all-purpose flour
- ½ cup (115 g) cold unsalted butter, cubed
- 1 egg yolk
- 2–3 tbsp cold water
- ½ tsp salt
- 2 cups fresh spinach (or 1 cup cooked spinach), chopped
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 2 eggs
- ½ cup heavy cream (or milk)
- ½ cup shredded mozzarella
- ¼ cup crumbled feta or ricotta
- Salt & pepper to taste
- Pinch of nutmeg (optional but perfect for the holidays)
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix flour and salt.
- Add cold butter and rub with fingertips until sandy.
- Add egg yolk and cold water until dough forms.
- Press the dough into tartlet molds, making a firm, even shell.
- Poke bottoms with a fork.
- Bake for 8 minutes to lightly pre-bake.
- Heat olive oil in a pan and sauté garlic for 30 seconds.
- Add spinach and cook until wilted (or warmed if frozen).
- Season with salt, pepper, and nutmeg.
- In a bowl, whisk eggs and cream, then add mozzarella and combine.
- Spoon a small amount of spinach into each tart.
- Pour the egg–cream mixture over it, filling nearly to the top.
- Add a sprinkle of feta on each for a pretty finish.
- Bake tartlets for 15–18 minutes, or until the centers are set, the tops are lightly golden, and the crust is crisp.
Notes
- You may also use store-bought tart shells.
- For a vegetarian option, ensure the cheese used is rennet-free.
- These tartlets can be made ahead and reheated before serving.
