- 1 oz Confectioners’ sugar (adds sweetness)
- 1 oz Milk powder for baking (enriches the dough)
- 0 oz Cornstarch (ensures a flaky pastry)
- 7 oz Unsalted butter (at room temperature for moisture)
- 2 pieces Egg yolks (adds richness)
- 3 pieces Egg yolks (for egg wash)
- 0 teaspoon Condensed milk (adds sweetness)
Instructions
- Blend the Pineapple: Using an electric blender, blend the pineapple for about 10 seconds until smooth, but keep a slight texture. Transfer it to a non-stick pot for cooking.
- Cook the Jam: Add the sugar, cloves, and cinnamon stick to the pot. Cook the pineapple over medium to low heat for a few hours, stirring continuously until a golden jam forms.
- Sift the Dry Ingredients: Sift the flour, sugar, milk powder, and cornstarch twice. In a stand mixer, cream the butter and sugar until light and fluffy. Beat in the egg yolks one at a time, then gradually mix in the flour mixture until well combined.
- Shape the Dough: Work with 50g of pastry dough at a time. Roll the dough between two sheets of plastic wrap to form a thin layer. Pipe your delicious pineapple jam on top, then roll the dough to fully encase the jam.
- Cut the Rolls: Use scissors to cut the encased dough into 4 cm long rolls. Arrange these delightful pineapple rolls on a parchment-lined baking sheet.
- Prepare the Egg Wash: Preheat the oven to 150°C. Mix the egg wash ingredients until smooth. Brush the tops of your pineapple rolls with the mixture twice.
- Bake to Perfection: Bake in the preheated oven until golden brown, about 15-20 minutes. Let them cool completely before storing.
