Description

  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, for brightness)
  • 1 can (21 oz / 595 g) cherry pie filling
  • Whipped cream, for garnish (optional)

Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until evenly moistened. Press the mixture firmly into the bottom (and slightly up the sides) of a 9-inch (23 cm) springform pan. Chill in the refrigerator for 20–30 minutes while preparing the filling.
  2. In a large mixing bowl, beat cream cheese until smooth and creamy. Add powdered sugar, vanilla extract, and lemon juice, beating until fully incorporated. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  3. Spoon the cheesecake filling over the chilled crust. Smooth the top with a spatula for an even finish. Chill for at least 4 hours, or overnight, until firm.
  4. Once set, spoon the cherry pie filling evenly over the top. Pipe or spoon whipped cream around the edges for decoration (optional). Chill again for 30 minutes before serving for a cleaner slice.
