- ½ cup (115 g) melted butter
- 2 tbsp granulated sugar
- 16 oz (450 g) cream cheese, softened
- 1 cup (240 ml) heavy whipping cream (cold)
- ¾ cup (90 g) powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional, for brightness)
- 1 can (21 oz / 595 g) cherry pie filling
- Whipped cream, for garnish (optional)
Instructions
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until evenly moistened. Press the mixture firmly into the bottom (and slightly up the sides) of a 9-inch (23 cm) springform pan. Chill in the refrigerator for 20–30 minutes while preparing the filling.
- In a large mixing bowl, beat cream cheese until smooth and creamy. Add powdered sugar, vanilla extract, and lemon juice, beating until fully incorporated. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Spoon the cheesecake filling over the chilled crust. Smooth the top with a spatula for an even finish. Chill for at least 4 hours, or overnight, until firm.
- Once set, spoon the cherry pie filling evenly over the top. Pipe or spoon whipped cream around the edges for decoration (optional). Chill again for 30 minutes before serving for a cleaner slice.
