Delicious and easy-to-make no-bake chocolate oatmeal peanut butter bars that are perfect for a quick snack or dessert.

- 3 cups quick oats
- 1 cup creamy peanut butter
- ¾ cup honey (or maple syrup)
- ½ cup brown sugar
- ½ cup unsalted butter (or coconut oil)
- 1 tsp vanilla extract
- Pinch of salt
- 2 cups semisweet chocolate chips
- ½ cup creamy peanut butter (for topping)
Instructions
- In a saucepan, combine butter, brown sugar, and honey. Heat on medium until sugar dissolves and mixture just starts to bubble.
- Remove from heat and stir in peanut butter, vanilla, and salt until smooth.
- Add in oats and mix well.
- Press mixture firmly into a 9×13-inch baking pan lined with parchment paper.
- In a microwave-safe bowl, melt chocolate chips and peanut butter together in 20-second intervals, stirring until smooth.
- Pour over oat base, spreading evenly.
- Refrigerate for 2–3 hours (or until firm).
- Slice into bars or squares.
