Description

Delicious and easy-to-make no-bake chocolate oatmeal peanut butter bars that are perfect for a quick snack or dessert.


Ingredients

  • 3 cups quick oats
  • 1 cup creamy peanut butter
  • ¾ cup honey (or maple syrup)
  • ½ cup brown sugar
  • ½ cup unsalted butter (or coconut oil)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 cups semisweet chocolate chips
  • ½ cup creamy peanut butter (for topping)

Instructions

  1. In a saucepan, combine butter, brown sugar, and honey. Heat on medium until sugar dissolves and mixture just starts to bubble.
  2. Remove from heat and stir in peanut butter, vanilla, and salt until smooth.
  3. Add in oats and mix well.
  4. Press mixture firmly into a 9×13-inch baking pan lined with parchment paper.
  5. In a microwave-safe bowl, melt chocolate chips and peanut butter together in 20-second intervals, stirring until smooth.
  6. Pour over oat base, spreading evenly.
  7. Refrigerate for 2–3 hours (or until firm).
  8. Slice into bars or squares.
