No-Bake Creamy Cheesecake Bites are a delightful and easy-to-make dessert that combines a buttery graham cracker crust with a rich and creamy cheesecake filling, topped with a crunchy graham crumble.

- 1 ½ cups graham cracker crumbs (or digestive biscuits, finely crushed)
- 5 tbsp melted unsalted butter
- 2 tbsp brown sugar
- 225 g (8 oz) cream cheese, softened
- 1 cup heavy whipping cream (cold)
- ½ cup sweetened condensed milk
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice (optional, for a tangy balance)
- ¼ cup graham crumbs (reserved)
- 1 tbsp melted butter
- Pinch of salt
Instructions
- In a bowl, mix graham crumbs, melted butter, and brown sugar until the texture resembles wet sand. Spoon a small layer (about 1 tsp) into the bottom of each silicone mold cavity or mini cupcake liner. Press firmly using the back of a spoon. Freeze for 10 minutes while preparing the filling.
- In a large bowl, beat the cream cheese until smooth and creamy. Add condensed milk, powdered sugar, vanilla, and lemon juice. Beat until silky. In a separate bowl, whip the cold cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- Spoon or pipe the cheesecake filling over the chilled crusts. Smooth the tops, then freeze for 2–3 hours or until firm enough to unmold.
- Mix the reserved graham crumbs, melted butter, and a pinch of salt. Sprinkle generously on top of each cheesecake bite. Chill or freeze for another 15 minutes before serving.
