Ingredients

  • 5 tbsp melted unsalted butter
  • 2 tbsp brown sugar
  • 225 g (8 oz) cream cheese, softened
  • 1 cup heavy whipping cream (cold)
  • ½ cup sweetened condensed milk
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice (optional, for a tangy balance)
  • ¼ cup graham crumbs (reserved)
  • 1 tbsp melted butter
  • Pinch of salt

Instructions

  1. In a bowl, mix graham crumbs, melted butter, and brown sugar until the texture resembles wet sand. Spoon a small layer (about 1 tsp) into the bottom of each silicone mold cavity or mini cupcake liner. Press firmly using the back of a spoon. Freeze for 10 minutes while preparing the filling.
  2. In a large bowl, beat the cream cheese until smooth and creamy. Add condensed milk, powdered sugar, vanilla, and lemon juice. Beat until silky. In a separate bowl, whip the cold cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  3. Spoon or pipe the cheesecake filling over the chilled crusts. Smooth the tops, then freeze for 2–3 hours or until firm enough to unmold.
  4. Mix the reserved graham crumbs, melted butter, and a pinch of salt. Sprinkle generously on top of each cheesecake bite. Chill or freeze for another 15 minutes before serving.
