- 2 cups (200 g) graham crackers or digestive biscuits, finely crushed
- ½ cup (115 g) unsalted butter, melted
- 2 tbsp sugar (optional)
- 16 oz (450 g) cream cheese, softened
- 1 cup (240 ml) heavy cream, chilled
- ¾ cup (90 g) powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 cup (200 g) fresh strawberries, sliced (for the inside layer)
- 1 ½ cups (300 g) fresh strawberries, halved (for topping)
- Whipped cream (for piping swirls)
- White chocolate shavings or coconut flakes (optional)
Instructions
- Prepare the Crust: Mix crushed biscuits with melted butter (and sugar if using). Press firmly into the base of a springform pan (8–9 inch). Chill in the refrigerator for at least 20 minutes.
- Make the Filling: Beat cream cheese and powdered sugar until smooth and creamy. Add vanilla and lemon juice, mixing well. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
- Assemble the Cheesecake: Arrange sliced strawberries around the inner edge of the pan. Spread half the filling over the crust. Add a layer of sliced strawberries in the middle. Spread the rest of the filling evenly on top. Smooth the surface and refrigerate for at least 6 hours or overnight.
- Decorate: Pipe whipped cream swirls on top. Place halved fresh strawberries over the cheesecake. Sprinkle with grated white chocolate or coconut flakes for a finishing touch.
- Serve: Slice, serve chilled, and enjoy a creamy, fruity delight!
