Description

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup whole milk
  • 4 large eggs
  • 1 cup all-purpose flour
  • ¼ tsp salt
  • 2 tbsp honey (plus extra for drizzling)
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease or butter a 12-cup muffin tin (or individual ramekins).
  3. In a medium saucepan, melt the butter over medium heat.
  4. Add milk and bring just to a gentle simmer.
  5. Remove from heat and quickly whisk in the flour and salt until smooth and thick.
  6. Allow mixture to cool for 2–3 minutes.
  7. Beat in eggs one at a time, whisking well after each until batter is smooth and glossy.
  8. Stir in 2 tablespoons honey.
  9. Divide batter evenly among muffin cups, filling each about 2/3 full.
  10. Bake for 30–35 minutes, until golden brown, puffed, and crisp on the outside.
  11. Remove from oven and drizzle warm puffs with honey.
  12. Dust lightly with powdered sugar.
  13. Serve warm for the best texture (crispy outside, airy inside).
