Nun’s Puffs are delightful honey-topped pastry puffs that are crispy on the outside and airy on the inside, perfect for a sweet treat.

- ½ cup (1 stick) unsalted butter
- 1 cup whole milk
- 4 large eggs
- 1 cup all-purpose flour
- ¼ tsp salt
- 2 tbsp honey (plus extra for drizzling)
- Powdered sugar, for dusting
Instructions
- Preheat oven to 375°F (190°C).
- Grease or butter a 12-cup muffin tin (or individual ramekins).
- In a medium saucepan, melt the butter over medium heat.
- Add milk and bring just to a gentle simmer.
- Remove from heat and quickly whisk in the flour and salt until smooth and thick.
- Allow mixture to cool for 2–3 minutes.
- Beat in eggs one at a time, whisking well after each until batter is smooth and glossy.
- Stir in 2 tablespoons honey.
- Divide batter evenly among muffin cups, filling each about 2/3 full.
- Bake for 30–35 minutes, until golden brown, puffed, and crisp on the outside.
- Remove from oven and drizzle warm puffs with honey.
- Dust lightly with powdered sugar.
- Serve warm for the best texture (crispy outside, airy inside).
Notes
- For best results, serve immediately after baking.
- These puffs can be stored in an airtight container for a day but are best enjoyed fresh.
