Description

Delicious sticky Asian chicken wings coated in a flavorful sauce made with butter, garlic, ginger, soy sauce, sake, and pineapple juice.


Ingredients

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, chopped
  • 2 teaspoons freshly ground ginger
  • ½ cup soy sauce
  • ⅓ cup sake
  • ¼ cup mirin
  • ½ cup pineapple juice
  • 1 tablespoon cornstarch
  • 3 pounds chicken wings
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons toasted sesame oil
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • ½ cup diced pineapple
  • ½ teaspoon sesame seeds
  • ¼ cup sliced green onions, for garnish

Instructions

  1. Heat a medium saucepan over medium heat, add butter and allow to melt. Add the garlic and ginger and sauté until fragrant, about 1 minute.
  2. Add the soy sauce, sake, mirin, and pineapple juice, whisking to combine.
  3. Bring the mixture to a boil then let simmer until thickened, about 10 minutes.
  4. In a small bowl whisk together the cornstarch with 2 tablespoons of water. Whisk in the cornstarch to the sauce and return to a simmer until the sauce coats the back of a spoon.
  5. Preheat oven to 400ºF (200ºC). Trim excess fat from the wings and discard.
  6. In a large mixing bowl toss the chicken wings with the olive oil and sesame oil then season with salt and pepper.
  7. Heat a large cast-iron skillet over medium heat. Add the chicken wings and sear until they are golden brown and lightly charred on all sides, about 15 minutes.
  8. Depending on the size of the skillet you may have to work in batches.
  9. Arrange the chicken on a baking sheet in a single layer and bake until the chicken is cooked through, about 15 minutes.
  10. In a large mixing bowl toss the grilled chicken with about 1 cup of the sauce mixture and the pineapple.
  11. Serve garnished with sesame seeds and green onion.

Notes

  • For extra flavor, marinate the wings in the sauce for a few hours before cooking.
  • Adjust the amount of ginger and garlic based on your taste preferences.
