  • Wooden sticks or skewers

Instructions

  1. Prepare the apples: Wash thoroughly to remove wax, dry completely, and insert wooden sticks into the center. Place them on a parchment-lined tray.
  2. Cook the candy syrup: In a heavy saucepan, combine sugar, corn syrup, water, and cream of tartar. Stir gently until sugar dissolves. Bring to a boil without stirring further. Continue cooking until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  3. Flavor and color: Remove from heat. Quickly stir in peach and berry extracts, along with your gel food coloring. Swirl gently to create a deep glossy hue.
  4. Dip the apples: Working quickly, tilt the pan slightly and dip each apple, turning to coat evenly. Let the excess drip off. Place apples back onto the parchment to set.
