Instructions

  1. In a heatproof bowl, whisk glutinous rice flour, cornstarch, sugar, and milk until smooth.
  2. Microwave (or steam) in 1-minute intervals, stirring each time, until the dough becomes thick, shiny, and stretchy (about 3–4 minutes total).
  3. Stir in melted butter, then let the dough cool slightly.
  4. Mix peach jam (or puree) with whipped cream or custard if you want a creamy center. Chill in the fridge to firm up.
  5. Dust a surface and your hands with cornstarch. Divide mochi dough into equal pieces (about golf ball size).
