Description

A refreshing and vibrant Pink Coconut Mojito, perfect for hot days or special occasions.


Ingredients

Scale
  • 810 fresh mint leaves
  • 1 tablespoon fresh lime juice (about ½ lime)
  • 2 teaspoons white sugar or simple syrup
  • ¼ cup coconut milk (full-fat preferred for creaminess)
  • ½ cup pink lemonade or pink dragon fruit juice or cranberry juice
  • ½ cup sparkling water or club soda, chilled
  • Crushed ice (lots!)
  • Fresh mint & lime slices for garnish
  • Optional (for alcoholic version): 40 ml (1.5 oz) white rum

Instructions

  1. In a tall glass, add mint leaves, sugar, and lime juice. Lightly press with a muddler or spoon to release mint oils (do NOT crush to a paste).
  2. Pour in the coconut milk and stir to dissolve sugar.
  3. Add the pink lemonade (or cranberry/dragon fruit juice).
  4. Fill the glass all the way with crushed ice.
  5. Top with sparkling water for fizz. Stir gently to swirl the colors but keep the ice fluffy.
  6. Add fresh mint sprigs and a straw. You can also add a lime wheel on the rim.

Notes

  • For a non-alcoholic version, simply omit the white rum.
  • Adjust the sweetness by adding more or less sugar/syrup according to your taste.
  • Experiment with different juices for unique flavors and colors.
