Ingredients

- 4 large eggs (room temperature)
- 2/3 cup (130g) granulated sugar
- 1 tsp vanilla extract
- 1 cup (120g) all-purpose flour
- 1 tsp baking powder
- 1/4 cup (60ml) warm milk
- 1 ½ cups (360ml) heavy whipping cream, cold
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp shredded coconut (optional)
- Pink gel coloring (optional – just a tiny touch)
- 1 cup (240ml) heavy whipping cream OR ¾ cup buttercream
- 2 tbsp powdered sugar (if using cream)
- Drop of pink gel coloring
- 1–1½ cups shredded coconut for coating
Instructions
- Preheat oven to 350°F (175°C). Line a rectangle baking tray (approx. 30×40 cm) with baking paper.
- Beat the eggs and sugar for 5–7 minutes until very pale, thick, and tripled in volume.
- Add vanilla.
- Sift in flour + baking powder. Fold gently to avoid deflating.
- Add warm milk, fold again just until smooth.
- Spread evenly in the tray and bake 10–12 minutes (top should be pale golden).
- Lay a clean kitchen towel on the counter and dust lightly with sugar.
- Flip the hot cake onto the towel, remove parchment, and roll it up gently.
- Let cool completely while rolled.
- Whip heavy cream + powdered sugar + vanilla until fluffy.
- Divide: leave part white and tint the rest light pink.
- Unroll the cake and spread filling evenly, swirling white and pink.
- Roll the cake back up tightly.
- Frost the outside lightly with pink whipped cream/buttercream.
- Press shredded coconut all around the cake.
- Chill 25–45 minutes before slicing.

- Ensure eggs are at room temperature for better volume.
- Use a light hand when folding in the flour to maintain the sponge’s airiness.
- Chilling the cake helps the frosting set better.
