Ingredients

  • 1 ½ tsp vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup (113 g) unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tbsp heavy cream or milk
  • 1 tsp vanilla extract (for frosting)
  • Pink gel food coloring (or a few drops of red)
  • Sprinkles for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a large bowl, cream butter and sugar together until light and fluffy. Beat in egg and vanilla.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to wet ingredients until combined.
  4. Scoop about 1 tbsp dough into each mini muffin cavity. Press gently in the center with your thumb or the back of a spoon to create a shallow well.
  5. Bake for 10–12 minutes, until lightly golden around edges. Immediately after removing from oven, press the centers again to reinforce the cup shape. Let cool completely in pan before removing.
  6. Beat softened butter until creamy. Gradually add powdered sugar, cream, and vanilla until fluffy. Tint with pink food coloring.
  7. Pipe frosting into each cooled cookie cup. Decorate with colorful sprinkles.
