- ½ cup (113 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 1 large egg
- 1 ½ tsp vanilla extract
- 1 ½ cups (190 g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup (113 g) unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 2 tbsp heavy cream or milk
- 1 tsp vanilla extract (for frosting)
- Pink gel food coloring (or a few drops of red)
- Sprinkles for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- In a large bowl, cream butter and sugar together until light and fluffy. Beat in egg and vanilla.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to wet ingredients until combined.
- Scoop about 1 tbsp dough into each mini muffin cavity. Press gently in the center with your thumb or the back of a spoon to create a shallow well.
- Bake for 10–12 minutes, until lightly golden around edges. Immediately after removing from oven, press the centers again to reinforce the cup shape. Let cool completely in pan before removing.
- Beat softened butter until creamy. Gradually add powdered sugar, cream, and vanilla until fluffy. Tint with pink food coloring.
- Pipe frosting into each cooled cookie cup. Decorate with colorful sprinkles.
