Description
A delicious and healthy dessert made with chickpeas, pumpkin, and vegan chocolate chips.
Ingredients

- 1 1/4 cups canned chickpeas, drained and rinsed
- 2/3 cup pumpkin puree
- 1/3 cup pure maple syrup
- 1/4 cup creamy almond butter
- 1/3 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 1/3 cup vegan chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Place chickpeas, pumpkin puree, maple syrup, almond butter, coconut sugar, vanilla extract, baking powder, cinnamon, and sea salt in a food processor.
- Blend until the mixture is very smooth, scraping down the sides as needed.
- Fold in the vegan chocolate chips with a spatula.
- Spread the batter evenly into the prepared pan. Sprinkle extra chocolate chips on top if desired.
- Bake for 25 minutes, or until the edges are golden and the center is set.
- Cool completely before slicing into 9 blondies.
Notes
- For a sweeter blondie, add more coconut sugar or maple syrup to taste.
- Make sure to let the blondies cool completely for easier slicing.
