Description

Creamy cheesecake centers coated in a rich red velvet crumb — the perfect bite-sized dessert for holidays, parties, or when you crave a sweet treat!

Ingredients

Scale
  • 8 oz (225 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup white chocolate, melted and cooled slightly
  • 1 box red velvet cake mix (baked & cooled) or leftover red velvet cake crumbs
  • Optional: red food coloring (to intensify the crumb color)

Instructions

  1. Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Mix in melted white chocolate until creamy. Chill mixture in the fridge for 30–40 minutes, until firm enough to roll.
  2. Prepare the coating: Bake red velvet cake according to package directions (or use leftovers). Once cooled, crumble into fine crumbs. Spread crumbs on a tray.
  3. Shape the bites: Scoop cheesecake filling into small balls (about 1 tbsp each). Roll each ball in red velvet crumbs until fully coated.
  4. Chill & serve: Place coated bites on a parchment-lined tray. Refrigerate for at least 1 hour before serving.

Notes

  • For a more vibrant color, add red food coloring to the crumbs.
  • These bites can be made ahead of time and stored in the refrigerator.
