- 8 oz (225 g) cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup white chocolate, melted and cooled slightly
- 1 box red velvet cake mix (baked & cooled) or leftover red velvet cake crumbs
- Optional: red food coloring (to intensify the crumb color)
Instructions
- Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Mix in melted white chocolate until creamy. Chill mixture in the fridge for 30–40 minutes, until firm enough to roll.
- Prepare the coating: Bake red velvet cake according to package directions (or use leftovers). Once cooled, crumble into fine crumbs. Spread crumbs on a tray.
- Shape the bites: Scoop cheesecake filling into small balls (about 1 tbsp each). Roll each ball in red velvet crumbs until fully coated.
- Chill & serve: Place coated bites on a parchment-lined tray. Refrigerate for at least 1 hour before serving.
Notes
- For a more vibrant color, add red food coloring to the crumbs.
- These bites can be made ahead of time and stored in the refrigerator.
